Abstract由於特殊的歷史等原因,相對中原僧人而言,晚唐五代敦煌僧人對飲食戒律有一定的變通,僧人可以在公開場合飲酒. 而是否遵守不食肉這條戒律,學界意見頗不一致. 持食肉說的主根據是敦煌的僧人在解齋和勞動期間,曾食用「臛」,而「臛」是一種肉湯. 其實,敦煌僧人當時食用的「臛」是一種菜湯或素臊子,主作為□[=食+孵(-卵)]□[=食+俞]或餺飥的佐餐. 帳籍反映,僧人們在食用「臛」時,寺院並沒宰殺羊隻,也沒支出糧食去市場交換肉食品. 僅有的一次看起來有僧人參加的用於招待木匠的羊的支出材料中,羊其實是為木匠宰殺的,僧人並沒參與食肉. 另外,作為敦煌美食的灌腸,只出現在屬於歸義軍衙內的文獻中,而寺院的文獻中沒記載. 一些僧人和信徒的「邈真贊」及施捨疏中所透露的信息和敦煌文獻中有一件粟特文的禁止僧人食肉的佛教文獻,均說明敦煌的僧人是遵守不食肉這條戒律的.
