Abstract中國是以農立國的民族,幾千年來,百姓多賴耕種維生,因此發展出來的傳統飲食習慣和素食相當近似,但這並不表示先民皆喜好素食,且已形成慈悲止殺的高度人文風潮. 素食文化的推廣,畢竟有待佛教東傳,佛家戒殺思想與中國傳統省欲去奢的理念相融和,使素食不僅是佛教的教餐,也是中國諸多具特色的菜系之一. 中國素食文化與佛教關係密切,本文運用佛典,史傳,筆記小說,文集,詩文評與當代學者研究成果,試圖釐清佛教素食的歷史發展背景,及其對中國社會習尚的影響,於是分從佛教的飲食要求,帝王的敕斷葷腥,士庶的齋素心態逐項評析論述; 至於文學創作與藝文理論,原屬文化中的一環,從中也可以見到佛教素食主義對古代文學家的啟迪與薰陶,故亦併在本文敘說之列.
